How to Keep Soda Bread Fresh for Gifting

How can I keep soda bread from going stale so fast? I want to give it as a Christmas gift but would have to make it at least on Dec 23rd.

Many thanks. I was hoping that maybe leaving out the sour cream (dairy) but leaving in the buttermilk might work.
