Can Chinese celery be substituted for western celery as long as the celery is being chopped or minced?

Hi Craig - You can substitute Chinese celery, just keep in mind that the stalks of Chinese celery are thinner than those of western celery so you may want to chop it larger and/or cook it for less time. Best, Lynn C.
