Lio Jozo Vinegar, Miyazu, Kyoto Prefecture

On a recent trip to Japan, Chris Kimball and Matt Card toured Lio Jozo Vinegar's production facility in the seaside town of Miyazu, Kyoto Prefecture. Matt Card said their products were "arguably, some of the best vinegar in Japan." They've been making rice vinegar in Miyazu since their founding in 1893.
