Japanese potato salads are defined by their mashed potato–like texture, a velvety richness from Kewpie mayonnaise, and the crunch of salted and squeezed-dry cucumbers. Some versions include carrots, corn, dashi or even cheese or salmon roe. This version, which Matt Card and Chris Kimball had at Y Market Brewing (a small brewpub in Nagoya), features crispy bacon and hard-boiled eggs.
