Grilled Chicken and Scallion Skewers (Negima Yakitori)

These grilled skewers contain small chunks of skin-on chicken thigh alternated with thick slices of green onions. As the skewers cook over charcoal, the chef brushes them with tare, a sweetened soy sauce mixture (usually soy sauce, mirin and/or sake and a sweetener like sugar or honey).
