Brioche-Style Mexican Biscuits (Bisquets) (Mexico City, Mexico)

Maque is a bakery/café with multiple locations in Mexico City. During a visit to the Condesa shop, we became particularly enamored of their bisquets: tall, fluffy biscuits leavened with both baking powder and yeast.

The deeply golden oversized buns featured a crumb that is sort of like a marriage of French brioche to a buttermilk biscuit, with slightly more sweetness.
